3 Healthy 'go-to' summer meals....

With July now here, the temperature higher and most people travelling abroad on their summer holidays, it can be difficult to stay healthy and watch what your eating. It's the season for Barbecues, and Ice Cream... so it can be difficult to resist when someone offers you a treat. Over the last few weeks I have discovered some healthy meals that would be perfect for Summer all while being good for you....

  • Tortilla Wrap Pizza
This has to be one of the easiest ideas for Summer and only takes 5-10 mins. It can also be used with whatever ingredients you have, so perfect for using up leftovers.
Start with a wholemeal wrap, and top it with a tin of chopped tomatoes. Then put whatever toppings you want on top. 

You really can use anything, I like to use peppers, onion, chicken and low fat cheese. Also a sprinkle of basil adds a bit more flavor. Put some low calorie oil in a pan and bring it to a high heat. Place the tortilla pizza in the pan until the base is cooked, then remove and cook the toppings under the grill until the tortilla turns crispy and the topping are cooked through. Then simply cut and serve... it really is that simple.

This is such a fab treat if you are a pizza fan, but want to watch what you are eating. It's great as you can put as much vegetables as you want as a topping and it tastes great, just like a regular thin crust pizza!

  • Chicken Fajitas
I love Chicken Fajitas all year round, but my favourite time to have them is in the Summer. They are often mistaken for being unhealthy, however they are healthier for you than what people think as they contain so much vegetables. Also, you can pick what toppings you want to add, so is great for ensuring you add only what you want. 

Chicken Fajitas can be cooked in the slow cooker, so less time is spent in the kitchen. The Slow Cooker does all the hard work for you!

All you need is chicken breast, peppers, onions and some tortilla powder flavoring. Put the veg at the bottom of the slow cooker and add the flavoring over top. Finally add the chicken and some stock and leave to cook until the chicken is ready.

Once ready, remove from slow cooker and tear the chicken using two forks. Then, using some wholemean, or seeded wraps, serve. You can use some low fat cheese and Greek yoghurt for something extra too! This can also be served on a bed of salad too, for an even healthier meal!

  • Avocado Pasta
This is a great healthy way of treating yourself to a bowl of pasta without making you feel bad. I absolutely love Avocado and only recently discovered it can be used in a pasta sauce to add flavour, and extra nutrients to your meal. I discovered this recipe from http://www.thelondoner.me/2012/06/avocado-spagetti.html and absolutely love it!

Boil your pasta as normal, preferably wholemeal pasta to make it even better for you. All you need to do next is take your avocados, along with some lemon juice, garlic, dash of olive oil and parmesan and some basil (add salt to taste) and blend together until smooth and creamy. Their are so many different things you can add to the sauce to get it to your preference... it might be worth googling it beforehand to see what options their are. 

Once the pasta is ready, simply mix together with the pasta until the sauce is well mixed in and serve....

I love this meal for Summer, it is great for days out and is tasty and refreshing, perfect for those hot summer days.

Their are so many tasty recipes that can be made in Summer, but these are just some of my favourites. It is so important to ensure you look after your body and eating healthy will be a great way to do that. I do have more recipies that I love, but these are by far the easiest (I like to spend as little time in the kitchen and more time out in the sun).
